Hi, welcome to Scatter Travel I’m your host Debbie Gerber. Today we are going to finish our discussion on how to make Margarita Pizza that I learned to love in Italy. I love their pizza.

Usually when I go visit a country I find a food that I especially like then I come home and learn to cook it. Then I share it with you. So, here goes the second half of how to make Margarita Pizza.

I am going to let everyone make their own pizzas. So I am going to cut it into four sections. We have our kids here this weekend.

Some will like bigger pizzas. I am going to cut it into eight right now. Now we will start with one of them. I am just going to start pulling it. Start working around the edges. If you break it just keep going. You just kind of of put it back together. Now remember this time I made it with the Spelt Flour because I wanted it just a little more healthy. So this is more of a whole grain pizza. You can see that it is more of a whole grain.

So you will want to flour the stone a little bit. You can use a stone, you can use a cookie sheet if you like. The stone gets it a little more like the really crispy bottom that you get in Italy. It is more like putting it in the wood fire oven especially when we have our oven up to such a high heat.

So just stretch it and if it gets a few holes that’s OK just stretch it out until it’s pretty thin. You want to get it pretty thin so it is nice and crispy. It’s OK if it’s got a few little holes in it. I just kind of put press it together. I’ve got it pretty thin now. So there is mine ready to go.

 I’ve got to go see if my husband wants to make his or if he wants me to make his. Sometimes it is just kind of fun to do it together. We are ready to go.

Alright the pizza is ready. Take a little bit of olive oil. Get a brush & brush some nice olive oil all over your pizza crust. It is going to make the top crispy. Then we are going to stick this in the oven until the pizza crust gets a little bit crusty on the top.

Then we are going to put our sauce on it. So let’s put that one in. Get your cookie sheet covered in oil. You can cover the entire pan with pizza dough. I’ve done that too. And that way it will make one big pizza and have a party and you could do that. I just take my hands and kind of stretch the dough. It does make little  holes in it.

The edges are the things that you want to have stretched out otherwise you get this clump of thick dough on the edges. It probably would have done better if I had started this a ball instead of a triangle.

But it will work. That’s the thing, don’t get too nitpicky or upset If things don’t go just exactly right. I am one of those people that just kind of goes with the flow fixes things as you go. If something doesn’t work figure it out and keep going. Life is like that. You shouldn’t have to worry too much just you know keep going!

Keep trying new things until you find something that works in life. Whatever you do make life an adventure. Don’t get freaked out or weirded out about life because it throws you a curve ball or things don’t go just as you want. Something like your pizza gets a hole in it. Patch yourself back up. Figure out where you at and what need to be done then get to work, get the job done. Life will give you just about exactly what you require out of it, as does a relationship. What you put into it is kind of what you get out of it.

I asked my husband if he wanted to make and stretch the crust for his pizza but he said he would rather just put the toppings on so that is how we will do it.

You have to be patient. Be slow with it. That’s kind of what you have to do with these things in your life.  Be patient. That’s how you have to treat your spouse and your kids and your family with patience and tolerance. A little fix up here and there.

On the cookie sheet I now have two individual pizzas ready to go. I have covered them in olive oil. Now I will go put them in the oven. I will check to see if it is bubbling and just a little bit crusty. Here is our pizza that has been in. It firmed up just a little bit. A little bit crusty so now we can put our toppings on it.

This one is mine so I am going to make a half of Margarita and a half of barbecued chicken one. This is some sauce that I made earlier. I mashed up some tomatoes and made a tomato paste out of it with Italian tomatoes. I put some garlic in it and some onion salt and a little bit of oregano.

You just put a little bit of sauce, not a lot. We are used to having a lot of sauce in the United States. That’s one thing I learned to appreciate over there is it doesn’t take a lot to make a flavor.. Then I am going to put some fresh basil on it, ooh it smells good! I’m tellin ya this is really awesome! Mmmmm… makes me just want to bite into it right now. There is some basil on my pizza.

I want basil all over it because i think the flavor of the fresh basil just really makes the pizza. So I got some basil all over my pizza now. Now, like I said I am going to do some tomatoes. I am going to do some of mine with the pieces of tomato that we cut up earlier.

OK, and then I am going to do…Maybe I will just do this whole one because I already put the red sauce on. I wasn’t thinking when I said half. So I am going to put the tomatoes on. See, there I’ve got lots of little bits of tomato on.

Then we need the mozzarella on. Like I said it just goes on in chunks. You can cut it up nicer I guess I am just pulling it apart which isn’t as sweet and pretty as you’re used to but you already saw me break a spoon so … you know. You know I am just a normal person. I just do whatever here. It’s not always the fanciest or the prettiest, but there you go.

So, there’s my pizza. It’s ready to go in the oven. I will take the other pizza out of the oven. Now I will let everyone else start to come up and start making their pizzas. I will get this one in the oven.

I am going to put my pizza back in the oven until it starts to bubble a little bit. When it gets bubbly and cooking really good and the mozzarella cheese is bubbly and melted then it will be ready. The crust will have a golden brown crispy edge on it almost to the point of being burnt but not quite. So here’s another pan of pizzas ready to go.

This one I am going to make with…. aah! I can’t open the jar. Oooh…there we go. Oooh! So this one I said I was going to make with a white sauce. So this one I am going to make with an Alfredo sauce. It is a roasted garlic Alfredo sauce. I’ll put some Alfredo sauce on it.

I’ll let everyone come out and make their own unless they decide to let me. Then they will have to put up with whatever it is that I want to make for them. Here is some of the barbecued chicken.

I am just going to dot it all over the pizza. This makes a lot. You have to remember now that we have only used about half of the pizza dough so far. So that gives you an idea of how far this will go. It goes quite a ways.

There’s our barbecue chicken and I think I want a little bit of fresh basil on it for flavor. I am going to put some smaller pieces on it. I want to make sure that every bite has some on it. Then I am going to do some more of the cheese. Drop it on in little piles or I could cut it or I could just drop it on. Whatever makes it the best.

Look how fun that is. You could add anything to this dish. You could get Americanized and add pineapple, and you could add some olives. We will do some with some peppers here. We will do some with some peppers and cheese. There are all kinds of things you can put on top. Just get creative with it. See the Mozzarella has melted in. The edges are nice and crisp. That’s what it looks like. Here is another one of the pizzas that just came out. It’s got the basil and the tomatoes on it, some peppers and it has barbecued chicken. This one has the Alfredo sauce on it.

 Very good! Very crispy edges. It’s crispy on the outside. Did you hear that crispy sound? But inside it is soft. Ooh, It’s very very good.
